NEPALESE VEGETARIAN CUISINE If you like spicy and exotic fla - vors this class is for you. We will make a Nepalese Vegetable Curry, Vegetarian Momos (Nepalese version of Tibetan dumplings) and a Tomato Cilantro Achar dipping sauce. Chef Sonja learned these recipes with a Nepalese chef while working at Victoria’s own Mint Restaurant. Come hungry - we’ll enjoy a delicious meal after the lesson. There will be demonstrations and some hands on participation in this class. BASIC CANNING & FOOD PRESERVATION If you missed learning this from your grandmother, then this class is a chance to experience hot water bath canning. We will choose fruits and vegetables from this bountiful harvest season and also discuss the possibilities of dehydrating fruits and vegetables. Prepare for a hands-on class and go home with two or three differ - ent canned items, jars provided. GLUTEN FREE BAKING Come and learn some top GF baking recipes that the Chef has learned over the last few years. We will talk about the basics of this gluten-free baking and create a menu of Blueberry Teff Muffins, Yeast Free Seed Bread, Vanilla Coconut Cake, with avocado choc- olate frosting and Almond Flour Cookies. It’s been said its better to eat less meat, both for the environment and your health; lets create a meatless meal! In this hands on class we will make an appetizer, a main dish (Leek & Feta Filo Pie), a salad (Quinoa, Almond Apricot with a spiced Moroccan dressing) and a desert (Vegan Chocolate Mousse) We will have a lovely meal at the end of the lesson. Bring an apron and some to go containers for possible leftovers.
